- Local code requirements
- Equipment size, type, location
- Kitchen layout (walls, doors, pass and drive though windows)
- HVAC coordination
- Location and design temperature of the job site
- Air volume – building and HVAC system design

Excellent system designs ensure comfortable cooks and diners with an energy efficient system.
We recognize the importance of providing the correct kitchen ventilation system design for each unique application.
Our experience assures an energy-efficient system design that promotes a healthy and comfortable kitchen environment.
Energy Management Systems
We have long embraced energy saving equipment ideas. Now that ongoing energy costs are continuing to rise, many are recognizing the overall value of more efficient systems.
Our energy management system controls the amount of air that is exhausted, avoiding unnecessary air removal from the kitchen. That in turn reduces the amount of energy needed to heat and cool make up air.
Our goal is to reduce the amount of exhaust air being drawn from the building envelope. The major issue here being the fact that for every cubic foot of air exhausted through the hood(s), an equal amount of air needs to replace it. As that replacement air needs to be heated or cooled, significant amounts of energy may be saved by reducing the overall amount of exhaust.
Our experience ranges from restaurants across the spectrum of food service facility types, including quick service restaurants, full service restaurants, and institutional facilities.
We understand the food service operator’s perspective and how equipment or ventilation system problems adversely affect the kitchen environment.
J & M Air has experience in a diversity of building types, including residential, restaurant, office, retail, K-12 schools, university, armory, healthcare, resort, amusement parks, hotel, supermarkets, malls, shopping center, firehouses, churches, synagogues, temples, houses of worship, industrial, and mixed-use commercial projects.
